Perfect Chewy Golden Chocolate Chip Cookies!

Chocolate chip cookies and I could write a bad romance. I love them far too much for my own good! One of the best things about America? The abundance of chewy chocolate chip cookies! I used to love trying them at random bakeries; I always go with classic. The chocolate chocolate ones are too much chocolate for me (although there was one cookie like that in my college dining hall that I occasionally dream of), and I dont like things like peanut butter or nuts taking away from the original taste.


I made these before, and I added crushed candy canes to it since I just had way too many candy canes lying around. I also love mint and chocolate but these cookies are still best unadulterated. 

This is Martha Stewart's recipe, and they are seriously perfection. I always used to think Martha was overrated; I mean, her face/name is on everything baking and decor related, how good could it POSSIBLY be... But this lady really does know how to make a great cookie. And a great chocolate cake. Although her method of making macarons doesn't work for me. But that's ok.

So I made these for a couple friends who had a joint birthday celebration last week. I made about 30 cookies and it took me forever. I've never had to make a mass amount of food. I had cookies coming out of my ears. I finally finished putting them all away and wrapping them up when I found yet another batch that I had made and put on the side to cool and forgotten about. Sigh!

Of course, I'm not complaining too much... the cookies came out delicious! They're just the right consistency for me; ever so slightly crunchy on the outside, chewy on the inside, and a choc chip in every bite.

Oh, and I made a batch last week with 60% dark chocolate chips (Ghiradelli) and they were even better than these! I think they're more like "adult chocolate chip cookies" since the chocolate is very dark and the cookie is not very sweet. I found semi-sweet a bit too sweet and even a bit generic in comparison, but my friends are picky eaters and wanted the classic so I went with it.

If ever there were a cookie recipe to stash away in your email/notes/recipe book, this one is it! It's also great to roll into plastic wrap and keep it in the fridge for rainy days.


Here's my adapted recipe:
Chocolate Chip Cookies

2 large eggs
2 tsp vanilla extract
1 1/4 stick of butter
1 cup packed brown sugar
1/2 cup white sugar
1 tsp salt
1/2 tsp baking soda
2 1/4 cups all-purpose flour
2 cups of chocolate chips (go with 60% cocoa for a richer taste!)

Preheat oven to 350 degrees F. In the bowl of an electric mixer, combine butter with both sugar till light and fluffy. Add salt, vanilla, and eggs. Beat until well mixed, and then add flour and baking soda. Stir in chocolate chips at the end. Put in the fridge to chill for at least 30 minutes; Bake for about 12 minutes or until cookies are golden around the edges (also depends on the size; I do tablespoon size mounds of dough spaced apart on the sheet). Let cool on baking sheet before trying to pick up. Keep in an airtight container if it's not consumed immediately!

Notes:
*They spread if they're not chilled; my later batches spread a bit more since they were left out waiting to be put in (This does not affect the taste factor at all though!)
*I put the timer for 12 but sometimes a couple of the batches needed longer. Take them out when the edges are golden and they should be perfectly chewy when cool.

Bite thy tongue! Martha Stewart is a goddess and I worship the ground she walks on. Plus, she is bat shit crazy, what is there not to love?

I think I'll be making these soon... Tempted to do it today but might be better to get some work done. How long do you store your cookie dough for? Do you just wrap it in the plastic wrap and put it in the fridge without another container?

yup, i just roll it up like a log in saran wrap and put it in the fridge as is. Treat it like store-bought cookie dough. It doesn't last long in my family (about a couple weeks), but cookie dough lasts forever if frozen! If you roll it into a log then it's easy to break off into pieces and put on the sheet :)

It's super easy with a mixer.. I have the most impatience waiting for the oven to preheat!

I don't have a mixer, which is a bit of a pain but I don't think I bake often enough yet to justify buying one. I can freeze the dough? Awesome! I love making stuff and freezing it for later convenience. I'm actually starting to think about buying a separate freezer if I can find one small and cheap enough.
