Coconut Macarons

I made my last set of macarons for a while. I'm going to try to focus on other desserts, and I have many other ideas to work on in the coming months...




But here they are! I made coconut macarons and mailed them off to JBS that next morning. I was going to make them as an homage to Ina's coconut cupcakes that everyone loves so much but I ran out of cream cheese at the last minute :(

Basically, I used the usual macaron recipe and put in a 1.5 tablespoons of ground coconut instead of cocoa... and then baked them as usual. I was going to make a cream cheese filling, so that they would be like Ina's (a combo of coconut, almond, vanilla and cream cheese) but had to make a vanilla buttercream filling instead. It turned out not too badly, even though buttercream is my least favorite. I think chocolate buttercream is okay but vanilla is always too sweet. Maybe it's me... I just don't really like the taste of butter.
(Speaking of, I hate having to clean bowls with butter residue! ACK!)

Ah well, I put a few pieces of coconut into the buttercream as well since I didn't feel like you could taste the coconut all that well. JBS said they were good but still not as good as the blueberry ones I made so long ago. I might make those when I go visit in March.

I need to work on taking pics during the baking process, except the lighting is pretty terrible in the kitchen. Sorry, that's all the picture I have for today!
