7-Layer Jello

In all the excitement for my mom's birthday last week, it suddenly occurred to me what she loves at every crappy buffet... JELLO. I like jello, but it's never really my choice of dessert... This recipe really is a fun way to eat jello though (in layers or in one giant bite, which way would YOU like it?) although it's a pain in the bum to make.




The recipe is fairly easy. Layers of your favorite colorful flavors with a layer of watered down condensed milk and gelatin mixture to break them up. It took me about 4 hours total, waiting for each jello mixture to come to room temperature and then waiting for each layer to properly set before adding the next one. I wanted to cut out hearts in them, but I had too many layers.


The last time I made this was for a Valentine's Day party Joe and I hosted at Emory. I did red and white layers and everyone loved it. But my mom never got to try any. Needless to say, this dessert is a favorite among kids and adults. Who doesn't love fun colors and JELLO!

The other dessert I made was the cake form of the cupcakes I posted about earlier. This cake is two layers of vanilla cake frosted and filled with peppermint cream cheese frosting and iced with chocolate ganache. I couldn't get a picture of a slice since we ate it at night and it was finished within the hour!
I wanted to write with white frosting but I didn't have any left so I had to go with my black decorating gel pen. It's still a bit messy and it dripped down the sides overnight, but this is a vast improvement on my last cake. (click here for a pic!). Just need to fix the lopsidedness... :)
