Nutella Banana Swirled Muffins

Mm, I saw someone post this online and I had to try it. I have mixed sentiments about bananas. I don't know how I feel about them in desserts, but I don't think they're bad. They're great for a mid-meal snack. My mom would put them in milkshakes, but I quickly got tired of that. And I find banoffee (sp?) odd... Anyway, this still sounded like a great breakfast snack to me, probably because of the inclusion of nutella. I made it with whole wheat flour so that it would be denser and a little bit healthier.

This was so quick and easy to make.
I got the recipe from here, but the blogger never lists banana in the recipe! So I just assumed it was 1 medium sized banana. Mine wasn't overly ripe yet but I still liked the way it turned out. The recipe tells you to divide the batter in half and put nutella in one half. Then swirl them together in the pan. So cute!




So, I went to this bakery in Atlanta... their popular cupcake is the Happy Monkey which is a banana cake with peanut butter frosting. It didn't sound very appetizing to me, but people don't seem to stop gushing over it! Luckily they had a mini one I could try... it was.... beyond anything I had ever tried. The peanut butter frosting was TO DIE FOR. I wanted to lick up every bit of it and snatch up every crumb. I could have eaten many many more... I still had some nutella banana muffins left so I ran home and made a quick peanut butter frosting to see if I could recreate it! It turned out sooo tasty.
I didn't get to measure out the frosting ingredients since I was in a crazed hurry (it was an emergency, not really) but I basically mixed two big spoonfuls of peanut butter, a little bit of regular butter, and some powdered sugar. It was heavenly.

I sent some over to my bff Zebo and she said it's definitely one of her favorite cupcakes ever. She agreed that the peanut butter frosting elevated the regular muffin to star status.


I would recommend the banana/nutella/peanut butter mixture to everyone! I'm glad I tried it even though I was skeptical. I like to try everything at least once before judging it.. You should try it especially if you only have mixed sentiments about bananas like me, maybe not if you absolutely hate them. As for me, I've been dreaming about it ever since.
