O-O-Oreo Cupcakes

My army of oreo cakes.
If you ask my family/friends, who have known me back when I lived in Wisconsin (for a year at age 5), what I was like, they will most likely tell you that I was shy, always had my nose in a book, and that I LOVED oreos. The funny thing is that I don't really remember why... I do remember eating them a lot, and my sister even bought me a Costco sized pack once. But now I find them too crunchy, always getting stuck in my teeth. And if it's not double-stuffed, there's just not enough creme inside for me!
When I saw a recipe for oreo cupcakes, I was intrigued since most people I know really love oreos, and I do like cookies n creme sorts of things. And I really wanted to know what an oreo would taste like in cupcake form. So I pretty much just had to try it.


This is one of the most interesting cupcakes I've ever made... I made them once with regular oreos, and with peanut butter oreos.... My friend Anishi's response was "they're strange and unique and unlike anything i've ever had. delicious."




They're definitely not very sweet at all, it's like eating a cake-y oreo? I guess it's basically a bunch of oreo cookies in a cake. Either way, I really like the subtle flavor. On my first bite, I thought it was weird, but as I kept eating, I found myself really enjoying it. Oddly enough, that happened every time I ate one...


If you like oreos, I'd tell you to try this. If you don't like oreos, I'd still tell you to try this. It's not too sweet, although I made it with 3 different frostings and couldn't decide which one I liked. Ultimately, I think I like it most as a muffin.




So, I'm REALLY looking forward to trying this with the peppermint Joe-Joe's from Trader Joe's! They have chopped up candy canes in the creme, which is just a brilliant idea. If you haven't tried them, I suggest you do. Mint and chocolate! I was waiting for them to start stocking it; since the day after Halloween, it was already Christmas at Target, I assumed the same for TJ's but I was wrong. It took them a couple weeks to catch up. I was so thrilled when I was in St. Louis and I found the peppermint Joe-Joe's, that, yes, he had to tell me to calm down (I'm glaring at you, HLi).


I was going to try to make the cupcakes with the peppermint Joe-Joe's but we ended up liking them so much (Joe finally understands my excitement over them) that we savored 2 a day for 2 weeks till they were gone. Luckily there's still more than a month to Xmas, and plenty of time for me to stock up on the Joe-Joe's!


O-O-Oreo Cupcakes
Adapted from Annie's Eats
Makes 12 cakes


Ingredients:
12 oreo halves with cream filling attached
1 1/8 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/2 stick butter at room temp (soft)
1/2 + 1/3 cup sugar
2 large egg whites
1 tsp vanilla
1/2 cup milk
10 oreo cookies coarsely chopped (I just broke them apart with my fingers)


Line your muffin pan, and put 1 oreo half on the bottom, cream side up, on each. Beat the butter and sugar till fluffy and then add in egg whites and vanilla. Beat in the dry ingredients and milk alternately but only beat until just mixed together properly. Fold the oreo pieces into the batter and then evenly divide it into the liners. 


Bake 18-20 minutes at 350 degrees F (or until a tester comes out clean)






Garnish and frost any way you like! I tried several frostings and didn't particularly care for any of them. Generally, you can use a cream cheese frosting and stir in some crushed oreo pieces. I incorporated some peanut butter into the frosting for the PB oreo cupcake batch.

Oh great! I'm loving going through your bake adventures and can say u r doing a great job! Loved the fact tht u said you can drop ur masters any day to start a bakery ;) I have similar feeling to start a restaurant. The only difference being I also manage a husband ;) hehe
