I love Henry, my fellow foodie. We bonded in college and used to spend a lot of time together. We also got to go to China, along with all my other favorite peeps... Barney, Mike, Andy, Berger :) Our senior year was ridiculously fun and filled with parties and good times. And a lot of yelling while playing "Pit"... then he left to get a Master's at Johns Hopkins and hardly ever comes home anymore. Sadness. It's ok, we still have ridiculously random conversations online.

It's funny how making mistakes while baking can sometimes turn out for the best...
I'd been wanting to try to make a double chocolate cookie for a while now. I never used to like them until I had them in my dining hall at UGA. Those were soft, a cross between a brownie and a cookie, and just the right amount of dark. Of course, basic chocolate chip cookies will always be nearest and dearest to my heart, but I thought I'd try this one.

I used to love this brownie cupcake I had in a little chocolatier shop in Atlanta. It was very crumbly and cracked at the top. And on the bottom, it was moist and dense. It also had caramel and pecans inside. Heaven.
So when I saw someone post a recipe of a pretty cracked top cupcake on FoodGawker, I had to try to make it. It asked for a LOT of dark chocolate in the batter. The result? Just the consistency I wanted! Of course, the original recipe was gluten-free and asked for almond meal, which I don't have, so I used regular flour instead.

I've been MIA on the blog for a few days because I've been discovering California with Joe! T'was definitely a trip of EPIC proportions, especially in terms of food. We ate and ate, and were always hungry for more.

Anishi Cakes

Anishi is another old friend of mine from college. Kinda scary that I can say that already. I feel old...
Anyway, she's a sweetheart. I met her through my BFF J, and have always thought she was gorgeous, inside and out. I remember for my 19th birthday, I had a party at a Korean karaoke place, and Anishi was nice enough to take all the pictures for me. I never quite forgot that. Especially since I didn't know her that well, and she really didn't have to. I don't even think I had brought a camera that night... It ended up being one of my favorite birthdays of all time (imagine having all your random groups of friends getting along great and participating in singing cheesy pop music!) and I never would have had pictures of it if it weren't for her.
This is one of my favorite pics from that night. Sigh. I want to be forever young!
So I know she loves peanut butter and chocolate, and decided to make her classy PBC cupcakes.
